You know what the weakest point of a typical sword is? The wielder.
A flying weapon is a weapon capable of fighting without anyone touching it. It floats into the air, moves as if there were an invisible hand guiding it, and attacks freely. Some flying weapons will stay near a particular user, parrying attacks against them; others operate entirely on their own. Sometimes they're magical tools, or haunted weapons, or wielded telekinetically.
A flying weapon is very likely to be an Empathic Weapon, and may also be an Attack Animal (or even an Equippable Ally if it has a life of its own). Nearly always a Cool Sword. See also Attack Drone for the real-world high-tech equivalent. When it is a sword and used in large numbers, they may overlap with a Storm of Blades.
A Master of the Levitating Blades is basically this trope, but multiplied several times over.
Also a valid way to summon a weapon to one's hand.

In Guild Wars 2 one of the classes of enemy that infests the dead land of Orr are the Spectral Weapons, which come in a variety including longbow, sword and shield, sword and off-hand dagger, dual-wielded torches and hammer. Ironically, the enemies don't actually match the designs of the collectible Spectral weapons you can acquire, instead being based on the 'Dragon's Deep' weapon set.

Alastor introduces itself this way in the first game, suddenly floating and moving on its own when it was just previously held by an object. However, after surviving being impaled in the chest by it, Dante is able to subjugate it but only ever wields it by hand afterwards. Alastor later reappears in Viewtiful Joe as a regular character, now in possession of a humanoid form. He is able to summon and control copies of his own sword form, where they will appear in mid-air and then home in on the player. He can also transform and fly around as a blade, attempting to slice and skewer his opponents.

Bleach:
In Shikai or its lowest level of Bankai, Byakuya's sword forms a swirling mass of tiny blossom-like blades. Byakuya can create the form of tiny daggers or entire swords out of them, enabling him create a Storm of Blades whenever he likes. When the Bankai enters Senkei, it creates an arena of thousands of fully-formed swords. What makes his Shikai and Bankai so dangerous is that there are countless tiny blades fluttering around the battlefield with the ability to cut you from any angle and get around any defense.
During the Soul Society arc, Uryu Ishida faced the 4th seat of Squad 7, Jirōbō Ikkanzaka. Jirōbō's Zanpakuto blade could transform into dozens of identical flying blades that fluttered around like little birds.

In Elden Ring, the sorceries of the long vanished land of Eochaid can enchant weapons to be levitated with the wielder's mind alone. There are two weapons with this property in the game. One is the Regalia of Eochaid. The other is the Marais' Executioner Sword, one of the Legendary Armaments. It didn't originally have this ability, but Elemer of the Briar who hailed from Eochaid stole it from the Marais family in their failed attempt to execute him. He then enchanted it with Eochaid sorceries. Both weapons have the same unique Ash of War skill, Eochaid's Dancing Blade, which lets you launch it at a foe and drill into them like a corkscrew.

In the fist game, Isaac's unique single-target spell is the Ragnarok, which crashes a giant sword made of Venus psynergy into the enemy. In the second, it's upgraded form is Odyssey, where two large swords pin down the enemy before a sword the length of the entire screen stabs it.

Xanth novel The Source of Magic. While going to a masquerade ball Bink is attacked by a flying sword sent by an unknown enemy. Luckily for him the sword is not very skilled at swordplay and he can parry its blows. He finally neutralizes it by getting it to stick itself into a gluebark tree.
The same sword appears again in a later book (set several centuries earlier). It's extremely skilled then, as well as faster, stronger, and more vicious. The implications being not only that Bink's talent was working heavily to protect him, but that the enchantment on the sword had faded far past its intended length of animation.

Dungeons & Dragons:
Module S1 Tomb of Horrors. One room had swords mounted on the walls. If any attempt was made to escape, the swords flew off the walls and attacked the escapees.
Early editions have magical "Dancing" weapons that can be loosed to fight autonomously in the wielder's space for a few turns at a time. The Epic Level Handbook takes it up a notch with "Everdancing" weapons that are much more independent and mobile.
Molidei demons have flying two-handed axes as their standard equipment.
The Hero-Deity Kelanen Prince of Swords in the Greyhawk setting. While wielding a normal sword, each minute of combat he can create another sword (to a maximum of nine) that flies through the air and attacks his enemies.
Spells:
A number of spells create weapons that attack the caster's opponents, such as Mordenkainen's Sword and Spiritual Hammer/Weapon.
In the 1st Edition Oriental Adventures'' supplement the Dancing Blade spell would cause a non-magical sword to attack an enemy on its own.
The Book of Marvelous Magic had the Bone of Bruising. Once launched it would constantly attack the victim, doing 1 Hit Point of damage per round and can't cast spells or use magic items that require a command word to activate.
The homebrew Telekinetic Bladestorm has this as its central power.

Cradle Series:
Flying swords are well-known weapons. They're not the most common because you have to feed them with your own madra and operate them remotely, but they certainly have their uses. Some people even fly on them.
Lindon sees a flying sword in the Heaven's Glory lesser treasure hall, and is disappointed he doesn't have an opportunity to steal it. Eight books later, when he finally comes back, he realizes it's a piece of junk made incompetently out of sub-par materials. He's hardly an expert, but he could make something better. When someone uses it against his sister, he runs up behind it—outpacing it—and then grabs it and throws it back at the man controlling it. Traditional wisdom is that you can't use a flying sword against its controller, but Lindon overpowers its own levitation and his throw makes a hole in the man's torso before he can react.
Lindon receives a flying sword of his own, Wavedancer, as his prize during part of the Uncrowned King tournament. It's an Archlord-level weapon without a binding, which makes it Boring, but Practical. Most weapons use bindings to unleash powerful techniques, but you have to be at the appropriate advancement level to use it safely. Wavedancer just requires lots of madra (which Lindon has in excess) and enough mental focus to control it. Lindon typically gives control of the sword to the mind spirit living in his head and then dedicates his entire focus to the fight.

Devil May Cry:
Alastor introduces itself this way in the first game, suddenly floating and moving on its own when it was just previously held by an object. However, after surviving being impaled in the chest by it, Dante is able to subjugate it but only ever wields it by hand afterwards. Alastor later reappears in Viewtiful Joe as a regular character, now in possession of a humanoid form. He is able to summon and control copies of his own sword form, where they will appear in mid-air and then home in on the player. He can also transform and fly around as a blade, attempting to slice and skewer his opponents.
Vergil/Nelo Angelo has his Summoned Swords/Mirage Blades, which he throws magically as his ranged attack as both a boss and a playable character. He has a wide variety of uses and attacks with his floating swords (e.g. Storm of Blades, Flechette Storm, Reverse Shrapnel), but he never has to move his hands nor physically hold those Summoned Swords/Mirage Blades while performing these attacks.
In Devil May Cry 4, the Gladius are flying reptile demons that can transform their bodies into swords. They always attack you in their flying sword forms.
Also in Devil May Cry 4, Dante can acquire the Lucifer Devil Arm which can create several red blades that float in mid-air after he attacks. Dante has several moves that manipulate, reposition, or launch these blades without him needing to touch them at all. Of a particular note is the "Climax" move wherein Dante claps his hands to command the blades to surround him.
In Devil May Cry 5, once Dante gains the Devil Sword Dante, he gains his own version of Summoned Swords, though unlike Vergil's ways of using them, Dante's floating swords mostly act as modifiers for his Styles or melee attacks.

Kingdom Hearts:
In Kingdom Hearts II, two of Sora's Drive Forms have him do this with his Keyblades. In Master Form he holds one Keyblade in his right hand while levitating the other with his left, while in Final Form both Keyblades follow his every movement, flying around to strike enemies even when he's not actively attacking.
As a successor of sorts to Final Form, when Sora enters his Ultimate Form in Kingdom Hearts III he wields numerous blades of light in this manner.
The Final Boss of the Re Mind scenario of Kingdom Hearts III: Re��Mind wields thirteen Keyblades, holding one in hand and controlling the others telekinetically.
Likewise, Aqua from Kingdom Hearts: Birth by Sleep can do this with her Keyblade when in her Spellweaver command style. Ventus's Wingblade style also summons swords of light that he brandishes without holding them.
Xaldin of Organization XIII uses his mastery over the element of wind to carry and wield six spears in tandem.
