Final Fantasy Tactics Advance and Final Fantasy Tactics A2 have six characters as the default for most battles and you're usually allowed to pick any six, though there are exceptions. As in Tactics, storyline missions require the protagonist to be present. In Tactics A2, some missions also have AI-controlled guest characters that automatically fill in spaces. Escort missions are probably the worst about this since the opponents usually still get a full team, you can have more than one character to protect, and the AI tends to be outright suicidal.

Final Fantasy XVI later followed up behind Lightning Returns by being the first mainline Final Fantasy game to have just one playable character, Clive. Though Clive is followed by his loyal dog, Torgal, and various other characters, these companions are not full playable characters. They have no health bar, don't draw aggro from enemies, can't be leveled up or controlled in any way (outside Torgal, who can be given some commands) and barely do anything in battle, only rarely doing any real damage to enemies themselves, leaving it up to Clive himself to largely deal with enemies.

Final Fantasy VI: Four is the max, but the cast changes all the time and you don't have to have a full party. There are also several parts (including the majority of the back half of the game) in which you can choose your party freely, the game largely averts Can't Drop the Hero, and there are two major late-game dungeons and a handful of smaller scenarios that involve grouping your playable characters into two to three parties and switching between them.
Final Fantasy IX, as an intentional throwback to the series' classic roots, goes back to a maximum-four-member party that is sometimes swappable and sometimes plot-mandated a la VI.
Final Fantasy XV is not shy of this as well. For most of the game, you control a four-man team comprised of Noctis, Ignis, Prompto and Gladiolus, with your occasional Guest-Star Party Member tagging along, and many sections where the main four are separated.

Some monsters will prevent you from switching characters mid-battle by locking the wagon doors or punt characters away, making them unusable for the rest of the battle.
The only exception was Dragon Quest V, which used three-member parties, and even that was brought to the standard of four in remakes.
Even Dragon Quest X, an MMO, forced players to form parties of no more than four people.
The Dragon Quest Monsters subseries used three-member parties for most of its history, but has shifted to the series-standard four in its most recent entries (starting with Joker 3).
