There's a saying that pets tend to look like their owners. Whether this is true in reality is obviously very debatable, but the magic of fiction allows this to be very true in media. Pets tend to take after their owners, both personality-wise and/or appearance-wise. "Pet" is a broad term here, including mounts, familiars, and mons.
People have pets of the same sex as themselves more often than not. The two may also be alike in coloration. Alternatively, the color of the mount may say something about the rider by way of color symbolism.
The two are alike in personality. Such pets are typically a metaphorical extension of their person, serving as a foil. This over caries over into the trope Empathy Pet. They may share a special bond, sometimes even taken up to eleven in the form of a Psychic Link.

Leon and Diego the Smilodon are both very guarded and wary around people they don't know but have a softer side that they reveal around the few that they trust.
Collete and Nero the dire wolf are both very tough, firm, and seemingly aloof, but have a softer side and are fiercely loyal to and protective towards those they care about. Collete also later bonds with Hannibal, an Argentavis who is just as intimidating on the outside, but protective on the inside, as she is.
Kyle bonds with Rommel, a Dimetrodon who is just as stocky, stubborn, and short-tempered as he is.

The Dresden Files: After saving a litter of Temple puppies, dogs with holy powers who typically guard churches and temples, one of the litter decides to hide in Harry's car and stay with Harry. Harry names this little guy Mouse for being small enough to fit into Harry's coat pocket and quiet demeanor. When Mouse grows up, he, like Harry, is larger than average. Harry is 6'9" and Mouse is nearly 3ft tall. Both are good at moving carefully and trying not to seem threatening despite their physical size. Personalitywise, as Mouse's heritage means he is capable of human-level thought, Mouse's internal dialogue from his narration and few scenes he speaks and Harry understands him, reveals himself to be a Deadpan Snarker who is fiercely protective of his loved ones, a combat pragmatist, defiant to those who are supposedly stronger than him, and if need be die to save the life of a loved one. All of which fits Harry perfectly too.

Khal Drogo, a big powerful man, rides a large red stallion. As a wedding gift, he gives his new Mystical White Hair wife a silver mare.
The Stark family stumbles across a litter of orphaned wolf puppies. The number of pups (6) and theirs sexes (4 boys; 2 girls) match those of the Stark children exactly. There's even one who's marked as an outsider (an albino runt) for the bastard son. As they grow up, the pups match the personalities of their people. For example, the Princess Classic's wolf is "the smallest of the litter, the prettiest, the most gentle and trusting." As the story unfolds they find out they're Bond Creatures.
The Clegane brothers—Gregor and Sandor—are both very strong and tall, Gregor more so than Sandor. Both ride massive stallions. That part's a Justified Trope—a large rider needs a large horse just for weight reasons. The more symbolic part is that Ax-Crazy Gregor's his horse is just as bad-tempered as he is. Sandor's horse, Stranger (named after The Grim Reaper known in their faith as the Stranger) has a mean temper too.

Ghost, not physically, but behaviorally. Like Jon Snow, Ghost is initially the unnoticed runt of the litter to individuals outside his family, but he's strong and loyal. Also like Jon, he has this habit of disappearing off to do his own thing without warning others and occasionally getting into hot water for it. Abandoning Jon may also not have been what it looked like, any more than Jon's "abandoning" of the Watch to live with the Free Folk was. Whatever he got up to, this wolf probably had Reasons. Ghost's white fur is a subtle reference to Jon's biological father, Prince Rhaegar Targaryen, who had the classic Targaryen look of silver hair, whereas Jon himself mostly resembles his mother Lyanna Stark.
