There's something of a basic rule in fiction. If Alice can speak Bob's language but has been pretending not to understand him, and Bob genuinely can't understand her, the likelihood of Bob finding out she speaks his language depends on how necessary it is to move the plot forward.
This manifests in three different ways.
Slipping up: Alice will slip up and speak to Bob in his language. Alternatively, she may react to something he says in a way that makes it obvious she understands him.
Getting caught: Bob overhears Alice talking to herself or to one of her friends in his language.
Intentional reveal: Maybe Alice finds herself in a situation where she desperately needs to communicate with Bob and has no choice but to talk to him in the language he understands. Maybe Alice has reached her breaking point and is so infuriated, she wants Bob to understand her when she yells at him. Maybe Alice avoided talking to Bob in his language due to a lack of trust, but he has gained her trust and now she feels safe enough to talk to him in the language they both speak. Whatever the reason is, Alice decides to reveal to Bob that she can speak his language.

If Alice usually speaks to Bob in his language and reveals herself to be fluent in a language he doesn't speak, that’s Suddenly Bilingual.

Gate: After an incident with a flame dragon caused a number of civilian casualties, Itami is called to testify before the Diet, along with Tuka, Lelei, and Rory Mercury. Lelei is well-versed in Japanese at this point, and actually functions as an interpreter. However, when a politician, looking to score political points and make the JSDF look bad, tries to make a case that the JSDF abandoned the civilians to save their own skin, Rory Mercury surprises everyone by revealing in the hearing that she actually speaks fluent Japanese by attacking the politician directly ("Anta baka?!" note  "Are you stupid?! in the original Japanese, "Are you a goddamned idiot!?" in the English dub). She then proceeds to demolish the politician's argument by accusing her of manipulating numbers. "A quarter of the people died? Three quarters were saved. Itami and his team did something that had never been done before. They neither hid nor ran away." The intensity of her testimony, plus the shock that she had learned Japanese in secret, had the needed impact and ended the hearing.

Rush Hour:
When Carter and Lee first partner up, Carter (a fast-talking and chronically snarky LAPD officer) assumes that Lee (a Hong Kong officer that he was tasked to "babysit") doesn't speak a lick of English and offers to teach him some words while taking him out on what he frames as a sightseeing tour of Los Angeles. However, once they end up butting heads and get into a standoff — leading to their taxi driver pointing a gun at both of them — Lee defuses the situation by explaining in English that they're both officers, and he was showing Carter how to take a gun from a suspect. Carter gets ticked off that Lee never revealed that he spoke English, and Lee insists that Carter never truly asked — he simply came to his own conclusions before letting his own mouth run wild.
And in the second movie, Carter tries to tell a Chinese taxi driver to follow Ricky Tan's car, but the driver keeps responding in Chinese. Frustrated, Carter gives him some money and asks, "You understand that?" The driver looks at the money and says, in English, "Now you're speaking my language."
The third movie also exemplifies this trope when Carter first flirts with Genevieve in Paris.

In The Boondocks' episode "The Red Ball", Huey and the other residents of Woodcrest are pitted against a team from China in a high stakes kickball game. The Chinese team captain Ming tells Huey that if she loses she might be sent to a labor camp. This manages to throw off his game until the captain's teammates talk to each other about the lie and insult his playing. Anyone with any knowledge of Huey's interests wouldn't be too surprised to know he understands Chinese. Cue Huey responding in kind, then beating the shit out of the Chinese team with the kickball.

A Song of Ice and Fire: Daenerys Targaryen has arrived in the slaver city of Astapor to buy an army with which she can invade Westeros and retake her family's throne, but the only language anyone speaks is High Valyrian. The Good Master that Daenerys is negotiating with has a scribe who relays the proposals between them, but either ignores or rewords Kraznys mo Nakloz's more sexual comments as Kraznys openly insults Dany from behind the language barrier. Once Daenerys has her army, she reveals that she could speak fluent High Valyrian this whole time due to it being her mother tongue (the Targaryens hail from Valyria just to the west of Slaver's Bay), then orders the army to exterminate the Good Masters and free every slave in the city.

Happens twice in "I'm With Stupid". SpongeBob pretends to be stupid to help Patrick impress his parents and pretends to only be able to talk in one to two word sentences, but drops the act for a moment to tell Patrick to meet him in the kitchen when Patrick starts to believe SpongeBob really is dumb and starts insulting him while he is in the room. Later, when SpongeBob completely drops the act to tell Patrick's parents that he was just pretending to be stupid to make Patrick look smart, they think Patrick taught him how to talk in complete sentences even though they already heard him say "Patrick, meet me in the kitchen" earlier. They are actually complete strangers and only thought they were Patrick's parents because he called them Mom and Dad.
In "Rock Bottom", SpongeBob meets a fish who communicates by blowing raspberries. After SpongeBob thanks him for helping him get back to Bikini Bottom, he says "You're welcome".

Getafix refuses but the interpreter, having been threatened with death if Getafix doesn't agree, lies and says he agrees. But as Asterix and Obelix arrive to free Getafix, the interpreter is taken captive while trying to escape when the Gauls surrender. As they are brought before the chief, Getafix reveals that he fluently speaks Gothic and that the interpreter has been lying, much to the shock of the interpreter.

Ah Sahm drops the act after being arrested and talks to Sergeant Bill O'Hara in English. The latter notes that with his eyes closed Ah Sahm could sound like anyone, while at the same time not picking up the obvious lesson one might take about racial division. Ah Sahm's Surprisingly Good English shocks so many throughout the series that it just becomes amusing by the tenth or eleventh time a character expresses surprise.
