They are called such because they are theoretically meant to be readable in five minutes if you don't have time to watch the full episode or movie. If anything, a fiver is an unholy fusion of an episode from an Abridged Series and Mystery Science Theater 3000.Just as contributors to TV Tropes are known as tropers, creators of fivers are known as fivists.
