Mortal Kombat became a mainstay of the Arcade gaming scene in the early 1990s, taking the world by storm. Of course, after the success of its first entry, Mortal Kombat, a list of copycats began to emerge in the following years, trying to capitalize on its success, to varying degrees.
Some of the trends Mortal Kombat, and their copies are set by this:
A cast of colourful characters brought to life by Digitized Sprites, and sometimes by Stop Motion and/or Claymation too (just as in the origin series with the Shokan and Centaurs in the first 3 games)
Each character having some sort of Finishing Move (the more outlandish, the better)
Gorn: blood and gore abound through the game, sometimes as much as MK.
There can be also in 3D models, usually following Mortal Kombat 4 style but also with the blood and the finishing moves
The third trait has been followed by its imitators, which have tried to up the gore to differentiate itself from Mortal Kombat. Althought there're some others that just avoid the Gorn to focus on other things, like gameplay and the finishing moves, no matter if they aren't bloody.
A Fighting Game trope only (but also can be found in other media), sub-trope of Video Game Tropes, Stock Parodies and Follow the Leader. There're some cases that this can be found in a Game Within a Game or as a parody of MK series in other media. If a Moral Guardian discusses this trope, it would be parodied as an Ultra Super Death Gore Fest Chainsawer 3000 game. Being usually made by imitators without experience, most of the games here falls into Sturgeon's Law.

Primal Rage: A strange fighting game starred by giant dinosaurs made in Stop Motion who fight to be the only one, since humans worship them as gods. The Life Meter of each character is accompanied by a realistic heart that beats faster and faster as the character loses health, and explodes in a large blood splatter when the character dies.

The Simpsons
In the episode "Marge Be Not Proud", the trendy video game that Bart and all the other kids want for Christmas is Bonestorm, an ultraviolent fighting game that has a lot of Gorn and finishing moves.
Another episode showcases a Mortal Kombat copycat named Hockey Dads, in which angry dads in a Hockey Fight pummel each other to death. The characters' children even point out that "it's already assault! Don't make it murder!", with a specialized button to ignore said childrens' pleas.

Eternal Champions is the first try of SEGA to enter in this genre, making a fighting game for Sega Genesis that is drawn by pixels, but has the violence and finishing moves of MK series. It didn't go well. An Updated Re-release on Sega CD added more characters and stages, better-quality audio, and tons more [disturbingly anatomically-correct] gore. Absurdly high difficulty aside, this one went a little better.

Killer Instinct: Even when the two first games made by Rare were the direct competition for MK, these games are made with 3D and more combo-focused, but also had blood and finishing moves, but not so much as MK. Even the 2013 reboot tried to compete with Mortal Kombat 9, but reduced consistently the blood and even the finishing moves are Lighter and Softer than the previous games.

ClayFighter 63 1/3, as well ClayFighter: Sculptor's Cut became parodies of various figting games, especially MK thanks to his "Claytalities", which are funny versions of Fatalities you can make to the opponent at the end of the round, mostly treating them as clay by cutting it in half, squishing it on the ground as an used bubblegum and squeeze it like a wet sponge, as well throwing off the island to be splatted on your TV screen.
As an extra detail, "Claytalities" were thought way before, as they were originally part of C2: Judgment Clay, but for various reasons, this were left out of the final game and the idea would be finally added to 63 1/3.

Kasumi Ninja: A cast of digitized live-actors, each character having some sort of finishing move, and, of course, emphasis on gore and blood in its combat. It is also one of the earliest games to feature Adjustable Censorship in regards to the amount of blood, and the health bars are in the form of katanas that becoming more covered in blood as the opponent takes damage, with blood even dripping from the katana.

Tattoo Assassins: Another woeful example in that the game went unreleased due to feedback from play testers. The game was such a blatant clone that it felt similar to MK in terms of music and even font choices. It also featured its own Native American character, the stereotypical Billy Two Moons (one of his unique fatalities has him scalp his foe). The game boasted thousands of fatalities but this number was inflated by the developers multiplying the shared fatalities per character.

In the ReBoot episode "Game Over", the User inserts a game that is styled after Mortal Kombat, though he uses a Big Red Devil for his avatar, which doesn't fit with any character from the games. During his fight with him, Enzo adopts an outfit similar to Scorpion. Notably, this game is portrayed more seriously than the others, as a matter of fact, Enzo loses and is presumed dead by the end of the episode — good thing he wasn't.

FoxTrot: In one series of strips from 1993, Jason used his Christmas money to buy the game Mortal Karnage II, which he describes as having, "17 levels of escalating bloodletting, digitally sampled screams and splatters and, of course, the new and improved decapitation round." Parodying the elaborate inputs required for some of MK's special moves, the game also has insanely complex controls, such as requiring a sequence of five d-pad and button inputs just to throw a basic punch.
